The Gascon Saintongeois exists in two varieties under one FCI standard. The Great Gascon Saintongeois was created in the mid-nineteenth century when Count Joseph de Carayon-Latour crossed the last of the declining Hound of Saintonge with Baron Ruble's Bleu de Gascogne — saving one breed at the cost of extinguishing the other; the Small variety was selected a century later from the smallest puppies in Great litters, originally for hare. The coat is short and tight, white with black patches and sometimes speckling, with tan cheeks and the two brow markings that give the "quatroeillé" four-eyed look; Great males stand 65–72 cm and females 62–68 cm, Small males 56–62 cm and females 54–59 cm. The FCI standard calls it a pack hound par excellence — fine-nosed, wide-casting, with a very sonorous voice, joining the pack instinctively, calm, affectionate and amenable to orders.

The FCI standard's Behaviour / Temperament section reads in full: "Pack hound par excellence, fine-nosed, wide-casting and endowed with a very sonorous voice. Joins the pack instinctively. Calm, affectionate and amenable to orders." The utilization section distinguishes the two varieties: the Great is used for shooting and sometimes big game but also hare, generally with the pack or alone as a sleuth; the Small is a versatile shooting dog whose origins make it a hare specialist.
